Your Dragao is already the fastest way to red-hot coals. Drop the Grill Grate across the top and it becomes the hottest cooking surface you own.
A chimney's whole job is to force a hard vertical draft up through the fuel column. That draft is why the Dragao lights a full load in minutes — and it is why the air above it runs far hotter than the direct-heat zone of any conventional grill. Put a grate across the mouth and you have a searing station: a proper crust in a couple of minutes a side, or a burner for a pan when you are cooking a long way from a kitchen.
The part most people miss. You should not cook on a standard chimney starter. Most are galvanised, and zinc coatings give off fumes at searing temperatures. The Dragao is 1.5mm TIG-welded stainless steel with no coating on it whatsoever — which is the only reason this grate can exist. Cook on ours. Don't cook on theirs.
Use it for: the finishing sear on a reverse-seared steak, a fast bite while the smoker comes up to temperature, or a skillet and a kettle at a desert camp.
Fits: The Dragao Premium Fire Chimney (sold separately).
Salt your steak and skip the pepper — it turns bitter at these temperatures. Gloves on, always. And never stand a lit chimney on decking, dry grass or concrete.
